Classic Homemade Apple Pie Recipe
This recipe makes one 9-inch (23 cm) apple pie with a flaky crust and a sweet, cinnamon-spiced apple filling.
Ingredients
For the Pie Crust
2½ cups (315 g) all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 cup (225 g) cold unsalted butter, cubed
6–8 tablespoons ice water
For the Apple Filling
6–7 medium apples (about 900 g), peeled, cored, and sliced
Good choices include Granny Smith Apple, Honeycrisp Apple, or a mix of sweet and tart apples.
¾ cup (150 g) brown sugar
¼ cup (50 g) granulated sugar
2 tablespoons all-purpose flour or cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon butter, cut into small pieces
For the Egg Wash
1 egg
1 tablespoon milk or water
—
Step 1: Make the Pie Crust
1. In a large bowl, combine flour, salt, and sugar.
2. Add the cold butter.
3. Cut the butter into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
4. Add ice water, 1 tablespoon at a time, mixing gently until the dough comes together.
5. Divide the dough into two equal portions.
6. Shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
—
Step 2: Prepare the Apple Filling
1. Peel, core, and thinly slice the apples.
2. Place them in a large bowl.
3. Add:
Brown sugar
Granulated sugar
Flour or cornstarch
Cinnamon
Nutmeg
Lemon juice
Vanilla extract
4. Toss until the apples are evenly coated.
5. Let the mixture rest for 10–15 minutes.
—
Step 3: Roll Out the Dough
1. Preheat the oven to 425°F (220°C).
2. Roll out one dough disk on a lightly floured surface into a 12-inch circle.
3. Transfer it to a 9-inch pie dish.
4. Gently press it into the bottom and sides.
—
Step 4: Fill the Pie
1. Spoon the apple mixture into the crust.
2. Mound the apples slightly in the center.
3. Dot the top with the small pieces of butter.
—
Step 5: Add the Top Crust
1. Roll out the second dough disk.
2. Place it over the filling.
3. Trim excess dough, leaving about 1 inch overhang.
4. Fold and crimp the edges.
5. Cut 4–5 small slits in the top to allow steam to escape.
Optional Lattice Top
Instead of a full crust, cut the dough into strips and weave them into a lattice pattern.
—
Step 6: Apply Egg Wash
1. Beat the egg with the milk.
2. Brush over the top crust.
3. Sprinkle with a little sugar for extra shine and crunch.
—
Step 7: Bake
1. Bake at 425°F (220°C) for 20 minutes.
2. Reduce the temperature to 375°F (190°C).
3. Continue baking for 35–45 minutes, until:
The crust is golden brown.
The filling is bubbling through the vents.
If the edges brown too quickly, cover them loosely with foil.
—
Step 8: Cool
Allow the pie to cool for at least 2–3 hours before slicing.
This helps the filling set properly.
