Ingredients
- 2 lbs boneless, skinless chicken breasts (about 3β4 breasts)
- 8 oz cream cheese, cut into 6β8 blocks
- 1 packet Ranch seasoning mix (1 oz)
- 1 can (10.5 oz) cream of chicken soup
- Β½ cup chicken broth
- 1 tsp garlic powder
- Β½ tsp onion powder
- Β½ tsp paprika
- Β½ tsp black pepper
- Β½ tsp salt, or to taste
- 1 cup shredded cheddar cheese (optional, but highly recommended)
- 4β6 slices cooked bacon, crumbled (optional)
- 2β3 green onions, sliced (optional)
How to make it
1. Add the chicken.
Place the raw chicken breasts in the bottom of your slow cooker. If they’re very thick, you can cut them horizontally into thinner pieces so they cook more evenly.
2. Season generously.
Sprinkle the chicken with the garlic powder, onion powder, paprika, black pepper, and a little salt. Then sprinkle the Ranch seasoning over everything.
3. Add the soup and broth.
Pour the cream of chicken soup over the chicken and add the Β½ cup chicken broth around the sides.
4. Add the cream cheese.
Cut the cream cheese into chunks and place the blocks directly on top of the chicken. Don’t worry about mixing it in yet.
5. Slow cook.
Cover and cook on LOW for about 4β6 hours, depending on the size of the breasts and your slow cooker. Cook until the chicken reaches 165Β°F internally.
Avoid cooking chicken breasts for excessively long periods because they can become dry and stringy.
6. Shred the chicken.
Once cooked, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the Crock-Pot.
7. Make it creamy.
Stir everything together really well. The cream cheese will melt into the soup and broth, creating a thick, creamy sauce.
If the sauce seems too thick, stir in a few tablespoons of warm chicken broth until you get the consistency you like.
8. Add the good stuff.
For an extra-delicious version, stir in 1 cup shredded cheddar cheese and let it melt for about 5β10 minutes. Top with crumbled bacon and sliced green onions.
