Chicken Feet Recipe — Tender, Flavorful & Easy
Chicken feet are commonly cooked by braising, simmering, or pressure-cooking until the skin becomes soft and gelatinous. They can make a rich, deeply flavored dish.
Ingredients
- 1½–2 lb (700–900 g) chicken feet
- 1 tablespoon salt, for cleaning
- 2 tablespoons vinegar or lemon juice
- 1 tablespoon cooking oil
- 5–6 cloves garlic, minced
- 1-inch piece fresh ginger, sliced
- 1 small onion, sliced
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce, optional
- 1 tablespoon oyster sauce
- 1 teaspoon sugar or honey
- ½ teaspoon black pepper
- 1–2 dried red chilies, optional
- 2 cups chicken stock or water
- 1 cinnamon stick
- 2 star anise, optional
- 2 green onions, chopped
- Sesame seeds, for garnish
Step 1: Clean the chicken feet
- Rinse the chicken feet thoroughly under cold running water.
- Rub them with salt and vinegar or lemon juice.
- Rinse again.
- Using kitchen scissors, trim off the claws/toe tips.
- Remove any remaining yellow outer skin or debris.
Step 2: Blanch
- Put the cleaned chicken feet into a large pot.
- Cover with water.
- Bring to a boil and cook for 5–8 minutes.
- Drain and rinse with fresh water.
Blanching helps remove impurities and gives the finished dish a cleaner flavor.
Step 3: Build the flavor
- Heat 1 tablespoon of oil in a heavy pot.
- Add the ginger, garlic, and onion.
- Sauté for about 2–3 minutes, until fragrant.
- Add the chicken feet.
- Stir in the soy sauce, dark soy sauce, oyster sauce, sugar, and black pepper.
- Add the cinnamon, star anise, and chilies if using.
- Toss everything together for another 2 minutes.
Step 4: Slow-cook
- Pour in the chicken stock or water. The liquid should come roughly halfway to two-thirds up the chicken feet.
- Bring to a gentle boil.
- Reduce the heat to low and cover.
- Simmer for approximately 1½–2½ hours, stirring occasionally.
- Cook until the skin is very tender and the connective tissue has softened.
If the liquid becomes too low before the feet are tender, add a little hot water.
Step 5: Finish the sauce
Remove the lid during the final 15–20 minutes of cooking and allow the sauce to reduce.
Taste and adjust:
- More soy sauce → saltier/deeper flavor
- A little honey or sugar → sweeter glaze
- Chili → more heat
- A splash of vinegar → brighter flavor
The finished chicken feet should be soft, glossy, and coated in a rich sauce.
Step 6: Serve
Transfer to a serving dish and garnish with chopped green onions and sesame seeds.
Serve hot with:
- Steamed white rice
- Fried rice
- Noodles
- Stir-fried vegetables
- Pickled vegetables
Pressure Cooker Method
For much faster cooking:
- Clean and blanch the chicken feet as above.
- Add them to a pressure cooker with the aromatics, sauces, seasonings, and about 1½ cups of stock.
- Cook under high pressure for approximately 20–25 minutes.
- Allow a natural pressure release for about 10–15 minutes.
- Transfer the feet and sauce to a pan and simmer uncovered until the sauce becomes thick and glossy.
About the Health Benefits
Chicken feet contain collagen-rich connective tissue, protein, and minerals, but claims that eating chicken feet dramatically improves skin, joints, or other health conditions are often overstated. Collagen from food is digested into amino acids and peptides rather than simply being deposited directly into your skin or joints.
They can certainly be part of a varied diet, but they shouldn’t be considered a treatment for a medical condition. Also, the nutritional profile changes substantially depending on how they’re prepared—especially if the recipe contains a lot of sodium, sugar, or oil.
