Crispy Vegetable Cheese Patties
These crispy vegetable cheese patties have a crunchy exterior and a soft, cheesy center. They make a great snack, appetizer, or burger filling.
Ingredients (Makes 8–10 Patties)
Vegetables
2 medium potatoes, boiled and mashed
1 medium carrot, grated
½ cup cabbage, finely chopped
¼ cup sweet corn (optional)
2 tablespoons finely chopped capsicum (bell pepper)
2 tablespoons finely chopped coriander (cilantro)
Cheese Filling
1 cup grated mozzarella or cheddar cheese
Seasonings
1 teaspoon salt (or to taste)
½ teaspoon black pepper
½ teaspoon red chili flakes
½ teaspoon garlic powder or 2 cloves garlic, minced
½ teaspoon mixed herbs or oregano
Binding
½ cup breadcrumbs
2 tablespoons cornflour (cornstarch)
Coating
½ cup flour
½ cup water
1 cup breadcrumbs
For Frying
Oil for shallow or deep frying

Step 1: Prepare the Vegetable Mixture
1. Boil potatoes until tender.
2. Peel and mash them while warm.
3. Add grated carrot, cabbage, corn, capsicum, and coriander.
4. Mix in salt, pepper, chili flakes, garlic, herbs, breadcrumbs, and cornflour.
5. Mix thoroughly until the mixture holds together.
If the mixture feels too soft, add a little more breadcrumbs.

Step 2: Shape the Patties
1. Take about 2 tablespoons of the mixture.
2. Flatten it in your palm.
3. Place 1–2 teaspoons grated cheese in the center.
4. Cover with more vegetable mixture.
5. Seal the edges carefully.
6. Shape into round or oval patties.

Step 3: Coat the Patties
Prepare Slurry
Mix:
½ cup flour
½ cup water
Stir until smooth.
Breadcrumb Coating
1. Dip each patty into the flour slurry.
2. Roll in breadcrumbs.
3. Press gently so the coating sticks well.
For extra crispiness, repeat the slurry and breadcrumb coating once more.

Step 4: Chill
Place the patties in the refrigerator for 20–30 minutes.
This helps them stay firm during frying.

Step 5: Fry
Shallow Fry
1. Heat oil in a frying pan.
2. Fry patties on medium heat.
3. Cook 3–4 minutes per side until golden brown.
Deep Fry
1. Heat oil to about 170–175°C.
2. Fry 2–3 patties at a time.
3. Cook until evenly golden and crisp.
