Ingredients
- 2 eggs
- 3 tablespoons all-purpose flour
- 1 small onion, finely chopped (optional)
- 1 green chili, finely chopped (optional)
- 2 tablespoons chopped fresh coriander/cilantro (optional)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red chili powder or paprika (optional)
- 2–3 tablespoons water (if needed)
- Oil for frying
Instructions
1. Prepare the batter
- Crack the 2 eggs into a bowl.
- Add salt, pepper, and any optional spices.
- Beat well until the yolks and whites are fully combined.
- Add flour and mix until smooth.
- Stir in onion, chili, and coriander if using.
- If the batter seems too thick, add 1–2 tablespoons of water. The consistency should be similar to pancake batter.
2. Heat the oil
- Pour about 1 cm (½ inch) of oil into a frying pan.
- Heat over medium heat.
- To test, drop a tiny bit of batter into the oil—it should sizzle immediately.
3. Fry the fritters
- Spoon small portions of batter into the hot oil.
- Fry for 2–3 minutes on one side until golden brown.
- Flip and fry another 2 minutes.
- Remove and place on paper towels to drain excess oil.
4. Serve
Serve hot with:
- Ketchup
- Chili sauce
- Garlic mayo
- Mint chutney
Extra-Crispy Version
Add:
- 2 tablespoons rice flour or cornflour
- A pinch of baking powder
This makes the fritters crunchier on the outside while staying soft inside.
Alternative: 2-Ingredient Egg Chips
If you literally only have eggs:
- Beat 2 eggs with a pinch of salt.
- Pour very thin layers into a lightly oiled hot pan.
- Cook until firm.
- Cut into strips or triangles.
- Deep-fry for 30–60 seconds until crisp.
