Instructions
Step 1: Prepare the oven
Preheat the oven to 375°F (190°C).
Lightly grease a 24-cup mini muffin pan.
Step 2: Prepare the dough
Unroll the crescent dough.
Press the seams together to form solid rectangles.
Cut each rectangle into 12 equal squares for a total of 24 squares.
Step 3: Line the muffin cups
Press one dough square into each muffin cup.
Gently press the dough against the bottom and sides to create a small cup.
Step 4: Add the brie
Place one cube of brie in the center of each dough cup.
Step 5: Add toppings
For cranberry brie bites
Add about 1 teaspoon cranberry sauce on top.
Sprinkle with chopped pecans.
Add a tiny rosemary leaf.
For fig and onion bites
Add ½ teaspoon fig jam.
Top with a few strands of caramelized onion.
Sprinkle with thyme.
Step 6: Bake
Bake for 12–15 minutes, or until:
the crescent dough is golden brown,
the cheese is melted and bubbly,
the edges are crisp.
Step 7: Cool
Let the bites cool in the pan for 5 minutes.
Carefully remove with a small spoon or butter knife.
Step 8: Serve
Serve warm while the cheese is soft and creamy.
Optional finishing touches:
Drizzle lightly with honey.
Sprinkle with flaky sea salt.
Add freshly cracked black pepper.
Tips for Success
Keep the brie chilled until you’re ready to cut it; cold cheese is easier to cube.
Small cubes melt more evenly and are less likely to overflow.
Don’t overfill with jam or sauce, as it may bubble over during baking.
If using watery toppings, drain excess liquid first.
The rind on brie is edible and melts well, so removing it is optional.
