Ingredients
For the cauliflower:
- 1 large cauliflower head (about 1–1.2 kg)
- 2–3 tablespoons olive oil or melted butter
- 3 cloves garlic, minced
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon paprika or red chili powder
- ½ teaspoon dried oregano or Italian seasoning
- 2 tablespoons lemon juice (optional)
For the creamy cheese topping:
- ½ cup cream or thick yogurt
- ½ cup mayonnaise (optional, for extra creaminess)
- 1 cup grated mozzarella cheese
- ½ cup grated cheddar cheese
- 2 tablespoons grated Parmesan cheese (optional)
- 2 tablespoons chopped fresh parsley or coriander
Optional additions:
- ½ cup cooked chicken pieces

Preparation Steps
1. Prepare the cauliflower
- Wash the cauliflower thoroughly and cut it into medium-sized florets.
- Bring a large pot of water to a boil.
- Add a little salt and boil the cauliflower for 3–5 minutes until slightly tender.
- Do not overcook; it should still have some firmness.
- Drain well and let it cool slightly.
(You can skip boiling and roast directly, but pre-cooking makes it softer and more flavorful.)
2. Season the cauliflower
- Place cauliflower florets in a large bowl.
- Add:
- Olive oil/butter
- Garlic
- Salt
- Pepper
- Paprika
- Oregano
- Lemon juice
- Toss until every piece is coated.
3. Make the cheese sauce
- Mix cream (or yogurt), mayonnaise (if using), half of the mozzarella, cheddar, and Parmesan.
- Add a pinch of salt, pepper, and chili flakes if you like spice.
- The mixture should be thick and creamy.
4. Assemble
- Preheat oven to 200°C (400°F).
- Grease a baking dish with butter or oil.
