🥓 Bacon-Wrapped Chicken Bites
Servings: 6–8 as an appetizer
Prep time: 20 minutes
Cook time: 25–35 minutes
Total: About 50–55 minutes
Oven: 400°F (200°C)
Ingredients
For the chicken
- 2 lb boneless, skinless chicken breasts or thighs
- 1 lb thin-cut bacon
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper — optional
For the sweet glaze
- ½ cup brown sugar
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- Optional: 1 tbsp hot sauce for a spicy version
Equipment
- Large baking sheet
- Aluminum foil
- Wire rack, preferably
- Toothpicks
- Small mixing bowl
Step 1: Prepare the chicken
Trim away any excess fat from the chicken.
Cut the chicken into about 1½-inch bite-sized pieces. Try to keep the pieces relatively similar in size so they cook evenly.
Place the chicken in a large bowl.
Add:
- Olive oil
- Garlic powder
- Smoked paprika
- Onion powder
- Salt
- Black pepper
- Cayenne, if using
Toss everything together until the chicken is evenly coated.
Tip: Don’t make the chicken pieces too large. Since they’re wrapped in bacon, smaller pieces cook more evenly and give you a better bacon-to-chicken ratio.
Step 2: Cut the bacon
Cut each bacon strip into approximately thirds.
For most bacon, one-third of a slice will be enough to wrap around a chicken piece.
Use thin or regular-cut bacon, rather than very thick bacon. Thick bacon takes longer to crisp and can cause the chicken to overcook while you’re waiting for the bacon to brown.
Step 3: Make the glaze
In a small bowl, combine:
- ½ cup brown sugar
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- Hot sauce, if desired
Mix until smooth.
The glaze should be thick but spreadable.
Important: Keep some glaze separate for brushing during cooking. Don’t use the same bowl/brush that has touched raw chicken unless it is thoroughly washed.
Step 4: Wrap the chicken
Take one piece of seasoned chicken.
Wrap it with one piece of bacon, overlapping the ends slightly.
Secure the bacon with a toothpick.
Repeat with the remaining chicken.
Place the wrapped pieces seam-side down on a foil-lined baking sheet, preferably on a wire rack.
The wire rack is helpful because it allows the bacon fat to drip away rather than letting the bites sit in grease.
Step 5: Add the glaze
Brush each bacon-wrapped chicken bite generously with the brown-sugar glaze.
Don’t drown them in glaze at this stage—you’ll add more later.
The sugar will caramelize during cooking, giving the bacon a beautiful sticky coating.
Step 6: Bake
Preheat your oven to 400°F (200°C).
Bake the chicken bites for approximately 20 minutes.
Then remove the tray and carefully brush another layer of glaze over the bacon.
Return the chicken to the oven for another 5–10 minutes, until:
- The bacon is browned and beginning to crisp.
- The glaze is bubbling and caramelized.
- The chicken reaches 165°F (74°C) internally.
Because chicken pieces can vary in size, use an instant-read thermometer in the thickest part of the chicken rather than relying only on cooking time.
Step 7: Get the bacon extra crispy
If the chicken is cooked but the bacon isn’t quite crispy enough, switch the oven to broil.
Place the tray under the broiler for approximately 1–3 minutes.
Watch it VERY closely.
The brown sugar glaze can go from beautifully caramelized to burned surprisingly quickly.
Step 8: Rest and serve
Remove the bites from the oven and let them rest for about 5 minutes.
Transfer them to a serving platter.
You can sprinkle them with:
- Chopped green onions
- Fresh parsley
- Sesame seeds
- A little extra black pepper
- Red pepper flakes
Serve warm with toothpicks.
🍯 Great dipping sauces
These are especially good with:
- Ranch
- Honey mustard
- BBQ sauce
- Spicy mayo
- Sweet chili sauce
⭐ Best tips for perfect bacon-wrapped chicken bites
1. Use thin bacon.
It crisps more easily before the chicken becomes overcooked.
2. Don’t skip the wire rack.
It helps hot air circulate around the bacon and lets excess fat drain away.
3. Don’t put too much sugar on at the beginning.
A thick layer can burn before the bacon is crispy. Add more glaze toward the end.
4. Use a thermometer.
Chicken is safely cooked when the center reaches 165°F (74°C).
5. Don’t overcrowd the pan.
Leave a little space between each bite so the bacon can brown instead of steaming.
6. For party prep:
You can cut and season the chicken and cut the bacon ahead of time. Assemble the bites several hours before cooking, cover, and refrigerate. Add the glaze shortly before baking.
🌶️ Spicy version
For a spicy-sweet version, add 1–2 tbsp hot sauce to the glaze and ¼–½ tsp cayenne to the chicken seasoning. A little crushed red pepper on top after baking is excellent too.
🧀 Extra-indulgent version
For cheesy bacon-wrapped bites, place a small cube of cheddar, pepper jack, or Monterey Jack against the chicken before wrapping it with bacon. Don’t use too much cheese or it will leak out during cooking.
