- 2 tablespoons melted butter
- 1 tablespoon granulated sugar

Step-by-step preparation
1. Make the blueberry compote
Add the blueberries, sugar, and lemon juice to a small saucepan.
Cook over medium heat for about 5–7 minutes, stirring occasionally. The blueberries will begin to soften and release their juices.
In a small bowl, mix the cornstarch with 1 tablespoon of water to make a smooth slurry.
Pour the slurry into the blueberries while stirring continuously. Cook for another 1–2 minutes, until the mixture thickens slightly.
Remove from the heat and stir in the vanilla.
Transfer the compote to a bowl and let it cool completely. For faster cooling, spread it into a shallow dish and refrigerate.

2. Prepare the biscuit layer
Combine the graham cracker or digestive biscuit crumbs with melted butter and sugar.
Mix until the crumbs resemble wet sand.
You can leave the crumbs fairly coarse for extra texture, or crush them finely for a smoother cheesecake-like base.
3. Make the cheesecake filling
Place the softened cream cheese in a mixing bowl.
Beat it until smooth and creamy, about 1–2 minutes.
Add the powdered sugar, vanilla extract, and lemon juice. Beat again until completely smooth.
In a separate bowl, whip the cold heavy cream until it reaches medium-to-stiff peaks.
Gently fold the whipped cream into the cream cheese mixture in 2–3 additions.
The finished mixture should be light, fluffy, and thick enough to hold its shape.
4. Assemble the parfaits
Use 4–6 small glasses, dessert cups, or jars.
For a neat layered effect, add the ingredients in this order:
- Biscuit crumbs — about 2 tablespoons
- Cheesecake filling — about 2–3 tablespoons
- Blueberry compote — about 2 tablespoons
- Repeat the layers if your glasses are tall enough.
- Finish with a layer of cheesecake filling or blueberry compote.
For particularly clean layers, pipe the cheesecake filling into the glasses using a piping bag or a zip-top bag with the corner snipped off.
5. Chill
Cover the parfaits and refrigerate for at least 1 hour, preferably 2 hours.
This allows the cheesecake filling to firm up and the flavors to blend.
6. Decorate and serve
Just before serving, top each parfait with:
- A few fresh blueberries
- A small swirl of whipped cream
- A little lemon zest
- A sprinkle of biscuit crumbs
