Low-Calorie Yogurt Cake
This recipe makes a light, moist cake with less sugar and fat than traditional cakes.
Ingredients (8 servings)
1 cup (240 g) plain low-fat Greek yogurt
2 large eggs
¼ cup (50 g) sugar or a low-calorie sweetener equivalent
1 teaspoon vanilla extract
1 cup (120 g) all-purpose flour
1 teaspoon baking powder
Pinch of salt
Optional: zest of 1 lemon
Instructions
Step 1: Prepare
1. Preheat the oven to 180°C (350°F).
2. Lightly grease an 8-inch (20 cm) round cake pan or line it with parchment paper.
Step 2: Mix Wet Ingredients
1. In a large bowl, whisk together:
Greek yogurt
Eggs
Sugar or sweetener
Vanilla extract
Lemon zest (if using)
2. Mix until smooth.
Step 3: Add Dry Ingredients
1. In a separate bowl, combine:
Flour
Baking powder
Salt
2. Gradually fold the dry ingredients into the wet mixture.
3. Stir just until combined. Do not overmix.
Step 4: Bake
1. Pour the batter into the prepared pan.
2. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Step 5: Cool
1. Let the cake cool in the pan for 10 minutes.
2. Transfer to a wire rack to cool completely.
