Southern 4-Ingredient Cucumber Sandwiches
A classic Southern-style cucumber sandwich is cool, creamy, crisp, and incredibly simple. The key is thinly sliced cucumber, soft white bread, and a creamy seasoned spread. These are perfect for tea parties, showers, brunches, picnics, or an easy summer lunch.
Ingredients
Makes about 12–16 small tea sandwiches.
-
1 large English cucumber (about 10–12 oz)
-
8 oz cream cheese, softened
-
4–6 slices white sandwich bread
-
1 packet ranch seasoning mix (about 1 oz)
Instructions
1. Prepare the cucumber
Wash and dry the cucumber thoroughly. You can leave the peel on for a little extra color and crunch, or peel it if you prefer a more traditional, delicate sandwich.
Slice the cucumber very thinly, ideally about ⅛ inch thick. A mandoline makes this especially easy, but a sharp knife works well.
Lay the slices in a single layer on paper towels. Sprinkle them very lightly with salt and let them sit for about 10–15 minutes.
This draws out excess water, which is important because cucumber releases a lot of moisture and can make the sandwiches soggy.
After 10–15 minutes, gently blot the cucumber slices very dry with additional paper towels.
2. Make the creamy spread
Place the softened cream cheese in a bowl.
Add the ranch seasoning mix and stir until completely combined and smooth.
For the easiest spreading, make sure the cream cheese is genuinely softened. If it’s too firm, it can tear the bread.
3. Assemble the sandwiches
Lay the bread slices on a clean work surface.
Spread a generous but even layer of the ranch cream cheese over one side of each slice.
Arrange a single layer of cucumber slices over half of the bread slices. Slightly overlap the cucumber pieces so that every bite contains cucumber.
Top with the remaining bread slices, spread-side down.
Press gently—don’t squash the sandwiches.
4. Trim and cut
For classic Southern tea sandwiches, trim away the crusts using a sharp serrated knife.
Then cut each sandwich into:
-
4 triangles for traditional tea sandwiches, or
-
2 rectangles for larger finger sandwiches.
Wipe the knife between cuts if cucumber moisture or cream cheese begins building up on the blade.
Make-Ahead Instructions
These sandwiches are best served relatively soon after assembly.
If you’re preparing them for a party, assemble them a few hours ahead and refrigerate them in a tightly covered container.
For the best texture:
-
Salt and dry the cucumber thoroughly.
-
Don’t make the bread soggy with an excessively thick cucumber layer.
-
Keep the sandwiches refrigerated until serving.
-
If stacking them, place parchment or wax paper between layers.
Southern-Style Tips
-
Use soft white bread. This is not the place for dense artisan bread; classic soft sandwich bread gives the right tender texture.
-
English cucumbers work particularly well because they’re crisp and have relatively small seeds.
-
Don’t skip drying the cucumber. This is the biggest trick to preventing watery sandwiches.
-
Use full-fat cream cheese for the richest, creamiest filling.
-
For an especially pretty presentation, leave the cucumber peel on and cut the sandwiches into small triangles.
Simple Ratio
For easy scaling, use approximately:
1 large cucumber + 8 oz cream cheese + 4–6 slices bread + 1 ranch seasoning packet
For a party, simply double or triple everything.
Serving idea: Arrange the little sandwiches on a platter with fresh fruit, tea, lemonade, or iced tea for a classic Southern-style spread.
