- ¼ cup (50 g) granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
Optional Lemon Glaze
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Equipment
- 9×5-inch loaf pan
- Mixing bowls
- Electric mixer or whisk
- Rubber spatula
- Cooling rack
- Parchment paper (recommended)
Instructions
Step 1: Prepare the Oven
- Preheat oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan.
- Line with parchment paper, leaving overhang for easy removal.
Step 2: Make the Cream Cheese Filling
- Beat softened cream cheese until smooth.
- Add sugar and mix well.
- Beat in egg yolk.
- Stir in vanilla.
- Set aside.
Step 3: Mix the Dry Ingredients
In a bowl whisk together:
- Flour
- Baking powder
- Salt
Set aside.
Step 4: Prepare the Batter
- Beat butter and sugar for 3–4 minutes until light and fluffy.
- Add eggs one at a time.
- Mix in vanilla.
- Add dry ingredients in three additions, alternating with milk.
- Mix only until combined.
Step 5: Fold in Blueberries
- Toss blueberries with 1 tablespoon flour.
- Gently fold into the batter using a spatula.
This prevents the berries from sinking.
Step 6: Assemble the Loaf
- Spread half the batter into the pan.
- Spoon cream cheese filling evenly over the batter.
- Cover with remaining batter.
- Smooth the top gently.
(Optional: Sprinkle a few extra blueberries on top.)
Step 7: Bake
Bake for 55–65 minutes.
Check doneness:
- Insert a toothpick near the edge (avoid the cream cheese center).
- It should come out mostly clean with a few moist crumbs.
If the top browns too quickly, loosely cover with foil during the last 15–20 minutes.
Step 8: Cool
- Let cool in pan for 15 minutes.
- Lift out using parchment paper.
- Cool completely before slicing.
This helps the cream cheese layer set properly.
Optional Lemon Glaze
Whisk together:
- Powdered sugar
- Lemon juice
- Lemon zest
Drizzle over the cooled loaf.
Tips for Success
- Use room-temperature butter, eggs, milk, and cream cheese.
- Coat blueberries with flour to keep them evenly distributed.
- Don’t overmix the batter; it can make the loaf dense.
- Fresh blueberries hold their shape best, but frozen blueberries work too. Use them straight from the freezer without thawing.
- Allow the loaf to cool completely before slicing for neat, clean layers.
