Blueberry Cream Cheese Loaf
A soft, rich quick bread with pockets of cream cheese and juicy blueberries. This version uses baking powder/soda instead of yeast, so it’s much easier than traditional loaf bread.
Ingredients
For the loaf batter
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
2 eggs
1 tsp vanilla extract
½ cup milk or yogurt
1½ cups blueberries (fresh or frozen)
For the cream cheese filling
200 g cream cheese, softened
3 tbsp sugar
1 egg yolk
½ tsp vanilla
Optional glaze
½ cup powdered sugar
1–2 tbsp milk or lemon juice

Instructions
1. Prepare the oven and pan
Preheat oven to 175°C / 350°F.
Grease a loaf pan or line with baking paper.

2. Make the cream cheese mixture
In a bowl, mix:
cream cheese
sugar
egg yolk
vanilla
Beat until smooth. Set aside.

3. Prepare the dry ingredients
In another bowl whisk:
flour
baking powder
baking soda
salt

4. Make the batter
In a large bowl:
Beat butter and sugar until light and fluffy.
Add eggs one at a time.
Mix in vanilla.
Now add the dry ingredients in 2 parts, alternating with milk/yogurt.
Do not overmix.

5. Add blueberries
Toss blueberries with 1 tbsp flour first (helps stop sinking).
Fold gently into batter.

6. Layer the loaf
1. Pour half the batter into loaf pan.
2. Spread cream cheese layer over it.
3. Add remaining batter on top.
4. Swirl lightly with a knife if desired.
You can sprinkle extra blueberries on top.

7. Bake
Bake for:
50–60 minutes
Check with a toothpick:
moist crumbs are okay
wet batter means it needs more time
If browning too fast, loosely cover with foil during last 15 minutes.

8. Cool
Let cool in pan 15 minutes.
Remove and cool completely before slicing.

Optional Glaze
Mix powdered sugar with milk/lemon juice and drizzle over cooled loaf.

Tips
Frozen blueberries work well; do not thaw first.
Yogurt makes the loaf extra moist.
For lemon flavor, add 1 tbsp lemon zest.
Store in fridge up to 5 days because of cream cheese.
