Here’s a rich, comforting slow cooker meal built around exactly that method.
Slow Cooker Cream Cheese Chicken
Servings: 6
Prep Time: 10 minutes
Cook Time: 4–6 hours on Low (or 2½–3 hours on High)
Ingredients
- 2–3 pounds boneless, skinless chicken breasts (4–6 breasts)
- 2 (8-ounce) blocks cream cheese, softened
- 1 packet ranch seasoning mix (1 ounce)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- 1 cup low-sodium chicken broth
- 1 can (10.5 ounces) cream of chicken soup (optional, for a richer sauce)
- 1 cup shredded cheddar cheese (optional)
- 6 slices cooked bacon, crumbled (optional)
- 2 tablespoons chopped fresh parsley or green onions for garnish
Instructions
1. Prepare the slow cooker
Lightly coat the crock with nonstick cooking spray or a little butter.
2. Add the chicken
Lay the raw chicken breasts in a single layer on the bottom of the crock pot.
3. Season
Sprinkle evenly with:
- Ranch seasoning
- Garlic powder
- Onion powder
- Black pepper
4. Add liquids
Pour the chicken broth around the chicken (not directly over the seasoning if possible).
If using cream of chicken soup, spread it over the chicken.
5. Add the cream cheese
Place the two blocks of cream cheese directly on top of the chicken.
Do not stir.
6. Cook
- Low: 4–6 hours (recommended)
- High: 2½–3 hours
The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.
7. Shred the chicken
Remove the chicken and shred it with two forks.
Whisk or stir the melted cream cheese and cooking juices until smooth. If the sauce seems too thick, stir in another ¼–½ cup chicken broth.
Return the shredded chicken to the slow cooker and mix until evenly coated.
8. Optional finishing touches
For an even richer meal, stir in:
- Shredded cheddar cheese
- Crumbled bacon
Cover for another 10–15 minutes until the cheese melts.
