½ cup all-purpose flour (maida)
-
3 tablespoons cornflour
-
½ cup water
-
1 cup breadcrumbs
-
1 egg (optional, for extra binding in the coating)

– Vegetable oil, as needed
3. Step-by-step preparation
Step 1: Boil the potatoes
-
Wash the potatoes thoroughly.
-
Place them in a saucepan and cover with water.
-
Boil for approximately 15–20 minutes, depending on their size.
-
Check with a knife. It should slide easily into the potatoes.
-
Drain all the water.
-
Allow the potatoes to cool completely.
-
Peel and mash until smooth.
Important tip: Make sure the potatoes are not watery. Excess moisture can make your patties soft and difficult to shape.
Step 2: Prepare the potato mixture
Add the following ingredients to the mashed potatoes:
-
Salt.
-
Black pepper.
-
Red chilli powder.
-
Chilli flakes.
-
Cumin powder.
-
Garlic powder.
-
Chopped green chillies.
-
Fresh coriander.
-
Cornflour.
-
Breadcrumbs.
Mix everything thoroughly until you get a soft, smooth dough-like mixture.
Texture check: The mixture should be firm enough to hold its shape when pressed. If it feels sticky, add another tablespoon of breadcrumbs.
Step 3: Prepare the cheese filling
-
Take a mixing bowl.
-
Add grated mozzarella cheese.
-
Add grated cheddar cheese.
-
Add oregano.
-
Add chilli flakes.
-
Add a little black pepper.
-
Mix gently.
Keep the cheese mixture refrigerated until needed.
Step 4: Shape the patties
-
Grease your hands lightly with oil.
-
Take approximately 2 tablespoons of potato mixture.
-
Roll it into a ball.
-
Flatten it gently into a small disc.
-
Place 1 tablespoon of cheese filling in the centre.
-
Carefully bring the edges together.
-
Seal the cheese completely inside.
-
Flatten gently into a round patty.
Repeat until all the mixture is used.
Important: Make sure there are no cracks or open edges. Otherwise, the cheese may leak during frying.
Step 5: Prepare the coating
Prepare three bowls:
-
Bowl 1: All-purpose flour mixed with cornflour.
-
Bowl 2: Water mixed with egg (or use water alone for an egg-free version).
-
Bowl 3: Breadcrumbs.
Now coat each patty:
-
First, roll it in the flour mixture.
-
Dip it into the egg-water mixture.
-
Finally, cover it generously with breadcrumbs.
-
Press the breadcrumbs gently so they stick properly.
For an extra crunchy coating, repeat the liquid and breadcrumb coating one more time.
Step 6: Refrigerate the patties
Place the prepared patties on a tray.
-
Refrigerate for 20–30 minutes.
-
This helps the coating stick.
-
It also helps the patties maintain their shape while frying.
Do not skip this step if your potato mixture is soft.
Step 7: Fry until golden and crispy
-
Heat oil in a deep frying pan.
-
Keep the heat at medium.
-
Carefully place 2–3 patties into the hot oil.
-
Do not overcrowd the pan.
-
Fry for approximately 3–4 minutes per side, depending on thickness.
-
Turn gently using a slotted spoon.
-
Fry until both sides become beautifully golden brown.
-
Remove and place on a wire rack or paper towels.
Ready to serve!
4. Final presentation
Serve hot while the cheese is still melted and creamy.
5. Delicious dipping sauces
These patties taste wonderful with:
-
Mint chutney: Fresh coriander, mint, green chilli, lemon juice and salt.
-
Garlic mayonnaise: Mayonnaise mixed with minced garlic and lemon juice.
-
Spicy ketchup: Tomato ketchup mixed with chilli sauce.
-
Cheese sauce: Warm cream mixed with cheddar cheese.
6. Five secrets for perfectly crispy patties
-
Use dry potatoes: Drain all the water after boiling.
-
Mash properly: Avoid large potato lumps.
-
Use cornflour: It helps bind the mixture and improves crispiness.
-
Seal the cheese: Keep the filling completely enclosed.
-
Fry at medium heat: Very hot oil can brown the outside before the inside is properly heated.

8. Make-ahead and storage tips
-
Refrigerator: Store uncooked, coated patties in an airtight container for up to 2 days.
-
Freezer: Freeze uncooked patties in a single layer, then transfer to a freezer-safe bag for up to 1 month for best quality.
-
Frying from frozen: Fry over medium-low heat until hot throughout and golden outside. Avoid thawing first if the coating becomes wet.
My special suggestion: Use a combination of mozzarella and cheddar. Mozzarella gives you that beautiful cheese pull, while cheddar adds a rich, delicious flavour.
