Sautéed Mushroom and Broccoli Stir-Fry

Vegetables
2 cups broccoli florets
250 g (8 oz) mushrooms, sliced
2 cloves garlic, minced
1 small onion, thinly sliced (optional)
1 tablespoon grated ginger (optional)
1 tablespoon cooking oil (vegetable, canola, or olive oil)
Stir-Fry Sauce
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
1 teaspoon honey or brown sugar
¼ teaspoon black pepper
2 tablespoons water

Sesame seeds
Chopped spring onions

Instructions
Step 1: Prepare the Vegetables
1. Wash the broccoli and cut it into bite-sized florets.
2. Slice the mushrooms.
3. Mince the garlic and, if using, grate the ginger.
Step 2: Blanch the Broccoli (Optional)
This helps keep the broccoli bright green and tender.
1. Bring a pot of water to a boil.
2. Add the broccoli and cook for 1–2 minutes.
3. Drain and rinse with cold water.
4. Set aside.
Step 3: Make the Sauce
In a small bowl, mix:
Soy sauce
Oyster sauce
Sesame oil
Honey or brown sugar
Black pepper
Water
Stir until combined.
Step 4: Sauté the Mushrooms
1. Heat a large skillet or wok over medium-high heat.
2. Add the oil.
3. Add the mushrooms in a single layer.
4. Cook for 4–5 minutes, stirring occasionally, until they release moisture and become golden brown.
Step 5: Add Aromatics
1. Add the onion (if using).
2. Cook for 2 minutes until softened.
3. Add the garlic and ginger.
4. Stir for 30 seconds until fragrant.
Step 6: Add Broccoli
1. Add the broccoli florets.
2. Stir-fry for 2–3 minutes.
Step 7: Add the Sauce
1. Pour the prepared sauce over the vegetables.
2. Toss everything together.
3. Cook for 1–2 more minutes until the sauce lightly coats the vegetables.
Step 8: Serve
1. Transfer to a serving dish.
2. Sprinkle with sesame seeds, spring onions, or chili flakes if desired.

Serve with steamed rice.
Pair with noodles.
Add tofu, chicken, shrimp, or beef for extra protein.
Tips
Don’t overcrowd the pan; mushrooms brown better when they have space.
High heat helps achieve a good stir-fry texture.
For extra sauce, double the sauce ingredients and add 1 teaspoon cornstarch mixed with 1 tablespoon water. This will create a thicker glaze.
